We process the milk from our herd of 150 dairy sheep. Chriatian is the shephard so he cares for the sheep, the milking and raising the lambs.
Maggie is the cheesemaker, since the cheese factory opened, she has developped over 6 sheep's milk products. all of our Cheeses are made from 100% pasteurized milk. There isn't any dyes, or preservatives except salt..
La petite folie is our cream cheese, available in 3 flavours plain, herbes and roasted red pepper

Le Jupon Frivole: soft cheese with a bloomy rind and a Yeasty finish
La Coulée Douce: firm cheese we wash the rind with local apple cider.
l'apprenti sorcier 50/50 blend of sheep and cow it is our brie
we also produce 100% cow's milk cheddar
we added an entire line of goat's milk cheeses in 2011 for your enjoyment
we also raise our own pigs. their diet consistes of whey from the cheese factory. We do not use any growth hormones or anti biotics. we believe that feeding them whey gives a refined taste and also contributes to the tenderness of the meat.
